Baking Process Specialist

Summary

Our client is a large commercial bakery based in Chattanooga, TN and they are looking to hire an experienced BAKING PROCESS SPECIALIST . This position will work closely with the Operations team and will champion adherence to process control and specifications. The Baking Process Specialist will be involved in the entire baking process from mixing through baking and into packaging. This role will help with product development, process development through scale-up and commercialization of new products.

Responsibilities

• Ensure dough, marshmallow and coating mix departments accurately scale and produce batches. The scope of this responsibility includes consistent adherence to formula quantities (bulk system delivery and hand adds), mix sequence, and batch reporting. • Develop and implement a training program for those new to a mix operator role. Frequently review best practices with all mix associates, with emphasis on cause and effect from specifications deviation. • Develop and document standards according to equipment and process changes. • Ensure daily the sheeter and/or rotary molder, marshmallow and coating systems are set up for the correct product, with their correct settings. Conduct root cause analysis when equipment is not operating up to standards. • Ensure oven setup documents are used for all product sizes and formulas. Develop and implement a procedure to update, replace, and archive setup information. Study run time adjustments for any trends that may cause downstream process issues, or shelf life concerns. • Review daily production reporting of downtime for timely corrective actions. Stay alert to any gaps where a deficiency would be improved by expanding or creating documented procedures. • Assist with investigation of customer concerns or complaints. • Thoroughly investigate a product or process failure and take corrective action. • Walk the floor frequently to ensure processes are on schedule, identify barriers, ensure communication and coordination, and identify any safety hazards.

Requirements

• Prefer candidates with a BA/BS degree or equivalent hands-on work experience with demonstrated competency and development capabilities • Must have at least 7 years of Bakery Production/Operations experience, full process from mixing through baking and into packaging • Must have a strong background in understanding ingredient functionality. • Must have R&D experience from product and process development through scale-up. • Prefer Lean manufacturing experience. • Should have prior supervisory experience, coaching with excellent communication skills. • Must have high quality expectations with strong attention to detail. • Must be a problem solver – gather information, understands root cause, manages process change.
